Roast Maple Brussels Sprout with apple and walnuts

1 lb Brussels sprout, ends cut, then halved

1 large apple, cored and roughly chopped

¼ cup walnuts, roughly chopped

1 tbsp olive oil

1 tbsp maple syrup

salt and pepper to take

Preheat oven to 200 C

In a large bowl, toss Brussels sprout, apple, and walnut with olive oil and maple syrup to coat evenly.   Add in salt and pepper and continue to toss.

Transfer mixture to a large baking sheet and roast for 30-35 minutes (stirring them after 10 -15 minutes) until Brussels sprout are tender.

Remove from oven and serve warm.  Enjoy!

(For a simpler version – toss the prepared sprouts in olive oil and roast in the oven until tender – remove from oven season with salt and pepper and a squeeze of lemon. Serve immediately, and enjoy.
