Green peas are an incredibly healthy food to incorporate into your diet. Peas, along with other vegetables, make a great accompaniment to meat or fish, they can be added to salads, they can be made into soup or dips. This delicious creamy pasta recipe by Deliciously Ella makes a great nutritious easy to prepare meal.
CREAMY PEA & SPINACH PASTA: A 10 MINUTE MEAL
1 serving of pasta (or brown rice pasta as a gluten free alternative)
2 tablespoon of yogurt (or coconut yogurt for a dairy free, vegan alternative)
A handful of spinach
Juice of half a lemon
A handful of garden peas (fresh or frozen)
Teaspoon of olive oil
Salt and pepper to taste
Start by cooking your pasta; bring a pan of water to boil and simmer your pasta for 7-9 minutes. If you’re using frozen peas, then cook them in with your pasta for the second half of the cooking time.
Once your pasta is cooked; drain and add your yogurt, oil, lemon juice, peas, spinach, salt and pepper – give the whole thing a good stir and enjoy!
